Send to kitchen creates a KOT. Adding food later is a second KOT, not a silent overwrite. Kitchen advances the ticket. Waiter sees ready. Cashier bills what was cooked — not a separate notepad.

Unsent cart blocks send-to-cashier. Empty takeaway/delivery warns before you fire a blank ticket. Two lines of the same item with different spice stay two lines.
